Sausage and Bean Casserole

Serves 4

  • 8 Italian Sausages or any other of your choice
  • 1 tbsp olive oil
  • 1 large onion, chopped
  • 2 garlic cloves, chopped
  • 1 green pepper, halved, deseeded and cut into strips
  • 225g fresh tomatoes skinned and chopped or 400g canned chopped tomatoes
  • 2 tbsp sun dried tomato paste or regular tomato paste
  • 400g cannelloni beans
  • Mashed potatoes or rice to serve

 

  1. Prick the Italian sausages all over with a fork. Cook the sausages, under a preheated grill, for 10-12 minutes, turning occasionally, until brown all over. Set aside and keep warm.
  2. Heat the oil in large frying pan. Add the onion, garlic, pepper to the pan and cook for 5 minutes, stirring occasionally, or until softened.
  3. Add the tomatoes to the pan and leave the mixture to simmer for about 5 minutes, stirring occasionally, or until slightly reduced and thickened.
  4. Stir the sun dried tomato paste, cannelloni beans and Italian sausages into the mixture in the frying pan. Cook for 4-5 minutes for until the mixture is piping hot. Add 4-5 tablespoons of water, if the mixture becomes to dry during cooking.
  5. Transfer the Italian sausage and bean casserole to serving plates and serve with mashed potato or rice.
