Chicken Chow Mein
Serves 1-2
- ½ slab of Chinese egg noodles
- 1 tbsp sunflower oil
- 1 chicken breast, cut into strips
- Vegetable Stir fry ( stir fry baby corn, courgettes, spring onion, mushrooms- quantities of your choice)
- ½ garlic clove, peeled and crushed or ¼ tsp garlic puree
- 2 tsp soy sauce
- 2 tsp vinegar
- ½ tsp ground ginger
- 2 tsp clear honey
- Put the noodles in a bowl and cover with boiling water. Stir, and then leave to stand while you cook the rest of dish.
- Heat the oil in a frying pan. Add the chicken and stir fry for 3 minutes until almost cooked.
- Add the remaining ingredients and stir fry for a further 3 minutes or until cooked.
- Stir the noodles, drain in a colander in the sink, and then stir into the frying pan. Heat through for 1-2 minutes, and then serve.
Tip: For some extra protein and taste, add unsalted cashew nuts at the stir frying stage.
