Quick Pan Pizza

Serves 1

  • 1 mug of self raising flour
  • A pinch of salt
  • 3 tbsp sunflower or olive oil
  • About 4 tbsp of cold water
  • 1 225 g can of chopped tomatoes, drained
  • ¼ tsp dried oregano
  • A handful of grated cheddar or mozzarella cheese
  1. Mix the flour and salt in a bowl. Add 2 tbsp of the oil and mix with cold water, a little at a time to form a soft but not sticky dough( you may need slightly more or less water, depending on the flour)
  2. Squeeze the dough gently into a ball then put it on a lightly floured surface and roll out with a rolling pin or clean bottle to a round the size of a medium frying pan.
  3. Heat the remaining oil in the frying pan and add the pizza base. Cook for 3 minutes until golden brown underneath.
  4. Turn over and tope with tomatoes, oregano and cheese. Cover with a lid or foil and cook over a fairly gentle heat for a bout 5 minutes until he cheese has melted.
